Hortobagy Meat Pancakes

This is also a traditional Hungarian dish such as Tomato Cabbage, Bakonyi Pork Slice and Szekely Cabbage, and Creamy Potato Salad with Fried Chicken Wings. It is also very easy to make, not as complicated as it seems at first glance.







Ingredients: 1kg Minced Pork, 40dkg Cheddar Cheese, 2pcs large Brown Onion, 1pcs Tomato, 1pcs White Paprika, 2tbsp Pork Lard, 4pcs Garlic Clove, 4tbsp Sour Cream, 2tbsp flour,  1tbsp Ground Red Pepper, Salt, Ground Black Pepper and Ground Caraway Seeds - to taste.

Pancake: 50 - 60dkg Fine Wheat Flour, 2pcs egg,  About; 500 - 600ml Water, 

Fry the finely chopped onion in a pan, in the hot pork lard with a pinch of salt until glassy. Stir in the ground paprika, add the minced meat, the crushed garlic, sprinkle with salt and ground pepper, and ground caraway, and cook until the meat is browned. Add the diced tomatoes, the white paprika cut into rings, and pour enough water to cover the meat. You can season it with salt and ground pepper, and you can also add 1tbsp of red paprika cream. Cook for 45 min to 1 hour. While the meat is cooking, prepare the pancakes. Put the flour and eggs in a bowl, add a pinch of salt and sugar, pour in a little water and mix until smooth with an electric hand mixer. Slowly add the rest of the water, and just enough to get a thick smoothie - like liquid. Heat a few drops of sunflower oil in a pan. When hot, add 1 ladle of batter and fry the pancakes. ( Put oil in the pan before each pancake.) When our pancakes are cooked and our stew is ready, we fill the pancakes. Strain the juice of the stew - do not throw it away, because you will need it - and grate the cheese. Put 1 - 1-5tbsp of minced meat in  each pancake, sprinkle with a little grated cheese and roll up. Place the filled pancakes in a pan greased with butter. Sprinkle with the remaining grated cheese, pour a little of the juice on top, put a few cubes of butter on a top, and bake in a preheated oven until the cheese melts on top. Heat up the juice of the stew that we sat aside before. Mix the sour cream and flour until smooth and add to the boiling juice, and cook until the juice thickens.

Chicken Milanese and Spaghetti Pomodoro

We love these tomato based dishes. And if there is fried meat with it, then we like it even more. I made this once, a long time ago, and it was posted on my old Hungarian blog. I made it then because of an important event, which I have cooked several times since then, even on weekdays. But it has remained a festive dish ever since.






Ingredients ( for 4 person): 500 gr Chicken Breast Fillets, 20gr Chicken Stock, 2tsp Dried Oregano, $pcs Smoked Garlic Cloves, 60gr Italian Cheese,120gr Panko Breadcrumbs, 400gr Spaghetti, 100gr Tomato Paste, 100gr Smoked Bacon, Salt, Ground Black Pepper and Ketchup - To Taste.




If necessary, dry the chicken breast fillet with a kitchen paper, and knock it out with a rolling pin. Then roll in flour, eggs and panko breadcrumbs. I like to fry the fried meat in an oil fryer, but if you don't like frying in a lot of oil, you can also fry it in the oven or in a pan with a little olive oil. Cook the spaghetti in boiling, lightly salted water for 8 - 10 min. Once done, drain, the pasta, reserving a cup of the starchy pasta water. Dissolve the chicken stock and tomato paste in 200ml boiled water. add the dried oregano, a pinch of  sugar and generous pinch of salt and pepper, and stir it all together. Heat a large pan, to a medium high heat, and add the diced smoked bacon and fry until crispy. If it crispy, add the smoked chopped garlic, and fry for 1 - 2 min. Add the tomato stock and reserving  pasta water, season, salt, pepper  and ketchup, and cook until the sauce thickens. If it feels sour, you can season  with sugar and ketchup.

Cabbage In Tomato Sauce

Hungary's favorite dish. With roast beef or pork and a slice of fresh root bread, a really delicious lunch or dinner.






Ingredients: 1,5kg White Cabbage, 2pcs Red Onions, 2pcs Garlic Cloves, 2pc, Bay Leaves, 1tsp Ground Cumin, 3dl Tomato Sauce, 3dl Water, 1tsp Flour Mixed with 100ml Water, Salt, Ground Black Pepper, Sugar - to your taste.

I cut the cabbage in half or in quarters and sliced ​​it thinly.. I peeled the red onion and cut it into strips. I heated olive oil in a pan and cooked the onion until it softened. I added the cabbage and cooked together with the onions. When the cabbage softens, add the tomato sauce, water, sugar(to your taste) than brought it to boil. In the meantime, I mixed 1 teaspoon flour and 100ml of water until smoothens. Once the cabbage smoothens after boiling it, add the flour and water mixture to it, than cook it for 2-3 minutes.
